When creating Seicha, the image we had in mind was “a tea that feels like a pure breeze passing through you from the very first sip.”
Tea writings from the Edo period described exceptional tea as creating the sensation of a fresh breeze flowing through the body the moment it was tasted. We produced this tea with that feeling in mind.
The leaves undergo withering, a process commonly used in the production of oolong and black tea but not usually found in Japanese green tea. After withering, they are steamed, an essential stage in Japanese tea production.
However, rather than using the primary rolling and final rolling machines normally required in the production process, we finish the tea without these stages. Although it is made by steaming, we do not refer to it as sencha. Instead, we named it Seicha, meaning “pure tea.”
True to its name, it has a fresh, green character. Because it is naturally grown without the use of any fertilisers, it has a clean and effortless quality that makes it as easy to drink as water.
The leaves themselves are unusually large and difficult to judge by appearance alone, but once hot water is added, they release a wonderfully complex floral aroma that we hope you will find deeply comforting.
Native tea can sometimes have a slightly earthy character when it is not withered. Withering completely transforms its impression, which makes producing this tea an exciting and unpredictable experience every year.
Its character also continues to evolve after approximately six months of ageing. We recommend purchasing two packs and storing one in the refrigerator for at least six months before enjoying it.
Brewing Instructions
First infusion: Add 100 ml of boiling water for each tea bag and steep in a teapot for 1 minute.
Second infusion: Add boiling water and steep for 30 seconds.
Third infusion: Add boiling water and steep for at least 3 minutes.
Cold Brew
Add 5–6 tea bags to 1 litre of filtered water and leave to infuse overnight in the refrigerator.
After cold brewing, pour boiling water over the same tea bags to enjoy another infusion.
How It Differs from Standard Japanese Sencha
・Because the leaves are not heavily rolled and their cells remain largely intact, the tea does not become excessively bitter even when left in boiling water.
・It is easy to prepare because it can be brewed with boiling water.
・The tea can be aged, allowing its flavour and aroma to evolve in interesting ways over time.
