[Manufacturing method]
I went to a farmer's field in Setouchi to pick up the first buds (sprouts) that came out over the winter. We steamed it in our own factory and continued kneading while adding heat for about 3 to 4 hours. In order to enjoy a fresher taste and aroma, the steaming time is extremely short, and the tea is carefully kneaded over time so that the temperature of the tea does not exceed human skin temperature. In order to emphasize freshness, we focus only on drying and do not perform final heating.
For making sencha, we use a 40-year-old Date-style tea processing machine that does not have any mechanical control devices. We always make full use of our five senses, such as the temperature we feel with our hands, the scent of the tea leaves, and the temperature and humidity that change depending on the day's weather, and are in perfect physical condition.
